Poori festival

I am sure all of you guys know how to make poori. But I am posting it to show some of the side dishes. May be a feast to our eyes too:)
Last weekend we had a small get-together in our house and I made poori with channa and Hotel style 'Poori kilangu'. Poori-kilangu is a famous dish in South India. Almost every restaurant will gladly present this kilangu with poori. Poori-kilanu is a non spicy potato masala curry made without much masala powders .This is the masala they keep inside paper-roast dosa to make masal dosa.

Poori:


Ingredients:
Wheat flour / Al purpose flour - 2 cups
salt - 1/2 tsp
baking soda - 1/2 tsp
water - enough to knead
oil - 300 ml (1 1/2 cup)

Method:

Mix flour, salt and baking soda in a wide vessel. Add water little by little to make a chapathi / bread dough. coat with oil and keep aside.
Do not make the dough a long time before making poori, otherwise they will absorb a lot of oil.
Divide the dough into small lemon size balls.
Then using a rolling pin , flatten each and every ball in to thin discs of diameter of your palm . keep them on plastic sheets.
Immediately heat oil and fry the flattened pooris one by one both sides.
Keep the fried pooris on paper towels to extract the left over oil.
Then serve hot with channa or potato masala.
Makes 25 number of palm size pooris.

Poori-kilangu:


This is the yummiest potato masala served with poori in South India.
Ingredients:
Potato - 4 (300 gms)
onion - 1
green chilli - 4
ginger- 2 tsp (chopped)
curry leaves - a brig
mustard seeds - 1/2 tsp
channa dhal (Bengal gram) - 2 tbsp
turmeric powder - 1/4 tsp
oil- 2 tsp
Besan flour - 2tsp
salt - to taste

Method:
Wash and Pressure cook the potatoes . Peel the skin and cut in to big chunks.
Mash the potato as fine as possible. (some people keep it as small cubes).
Chop the onion, green chillies , curry leaves and ginger.
Heat oil in a vessel. Add channa dal and then mustard seeds.
After the mustard seeds splutter add the chopped onion, green chilli curry leaves and ginger. Saute them a while till onion gets cooked add turmeric, salt, mashed potatoes.
Check for salt. Let it get thicken.
Mix 2 tsp besan flour with 1/4 cup water and add that to the boiling potatoes.
After a minute put off stove.
Poori-kilangu masala is ready. This is the basic version prepared in Madras hotels. Some people prefer adding tomato, green peas also.
Makes 2 cups of thick gravy like potato masala.

Channa masala:


Ingredients:

Chick peas / whole channa dal - 1 cup
tomato - 1
Red onion - 2 (medium size)
green chillies - 4
coriander leaves - a handful.
mint leaves - few
curry leaves - few
curd - 1/2 cup
cumin seeds - 1/2 tsp
red chilli powder - 1 tbsp
turmeric powder - a pich
MTR channa masala powder - 1 tsp (optional)
salt - to taste
olive oil - 1 tbsp
cardamom - 2
cloves - 2
Fennel seeds - 1/2 tsp
bay leaf - 1
Method:
Soak channa dal overnight and cook it to tender in a pressure cooker for 5 whistles.
After getting the first whistle ,I reduce the flame to the minimum and heat the cooker for another 10 minutes to cook this dal. You can follow this idea if you want to reduce the noise pollution:)
Grind ginger and garlic together.
Grind curd ,cardamom, cloves, cumin seeds and 1 onion together. keep aside.
Heat oil in a pan. fry some fennel seeds and bay leaf.
Add the chopped onion, green chillies ,curry leaves, cilantro and mint leaves. After the onion turns golden brown , add ginger garlic paste and saute well.
Now add cooked channa dhal with the remaining water.
Add chilli powder, turmeric powder , channa masal powder and stir well.
close the lid and cook for 5 minutes.
Add the ground curd masala and let it boil till the raw smell vanishes.
Now add salt , curd and mix well.
Using a laddle mash a few channa dhals to get a thick gravy.
Boil it for one minute and Switch off immediately .

Serving suggestions:

Goes well with parathas ,poori , roti and naan .
Makes 2 cups of channa masala.

Thukkada


I am sure this is the simplest of all the snacks ,no need to to spend a lot of time or looking for rare ingredients. Still the flavor and crispy Thukkada will attract every one in the house.
It just took 20 minutes to make the entire dish .

Ingredients:

All purpose flour - 1 cup
rice flour - 1 tbsp
baking soda - 1/4 tsp
garam masala - 1 tsp
curry leaves - 1 brig (torn into pieces)
salt - 3/4 tsp (check)
chilli powder - 1 tsp
water - a little
corn oil - to deep fry (250 ml )

Method:

Mix all the above except oil and water.
Then add water little by little to make a firm chapathi dough.
Divide the dough into equal lemon size balls.
Make thin chapathis one by one and cut diamond shapes out of them.
Heat oil in a pan .
Immediately deep fry them in oil to golden color and strain them out.
Then roll out another chapathi, cut diamonds and repeat the process .
Let them cool and store in air tight box for longevity.
Serve as snacks with tea in the evenings.

Venthaya kulambu (Methi spicy gravy)

Fenugreek (Methi) seeds and leaves helps in reducing the fatty tissue in our body.
Help in digestion by improving the liver function and to increase blood formation.
It has also shown results in controlling diabetes mellitus.
Soak one teaspoonful of fenugreek seeds in water overnight and this water should be consumed in empty stomach in the morning for controlling Blood Sugar.
So it is good to add it in our daily cooking in some form.

I love this venthaya kulambu for its lovely flavor and simplicity. Many families will have their own recipe for this venthaya kulambu and I am sure every one's version will be yummier than the other.
And here is the Tirunelveli (my native place) version.

Ingredients:
Mustard seeds - 1 tsp
Tamarind - 1/4 lemon size
Turmeric powder - 1/4 tspn
small white or green Brinjal- 3 nos
cury leaves - 1 brig
onion - 1 small
Tomato - 1 small
Hing - a pinch (optional)
Salt - to taste
Oil - 1 tbsp

venthaya kulambu masala:

Fenugreek seeds- 1tbsp
cumin - 1/4 tsp
Thoor dal (Red gram) - 2 tbsp
Dry chilli - 4
shredded Coconut - 1 tbsp

Method:
Heat oil in a pan.
Add Fenugreek seeds, Thoor dal, cumin,Dry chillies and fry till it turns golden brown. Then add shredded coconut.
Fry to get golden color.Cool the mixture and grind this to a powder.
Soak Tamarind in hot water and extract juice. Keep aside.
Heat oil in a pan.
Splutter the Mustard seeds and add chopped onion and fry till it becomes brown.
Then add curry leaves and chopped tomato.
Fry the tomato till it becomes tender.
Then goes the tamarind extract ,turmeric powder, Salt and brinjal.
Cook every thing till the brinjal gets cooked.
Then add the ground venthaya kulambu masala and let it boil for 3 minutes.
Venthaya kulambu is ready.

Serving suggestions:
Goes fine with rice and chapathi.
If served with rice , paruppu usili can be a good combo.

Milk Porridge / Paal Kanchi.

Porridge is otherwise called poor man's food. But there are a few exceptional porridges too. One of a such kind is the Milk porridge.
I find it easy to cook and digest whenever we have a great snack in the evening.
This is a one pot meal (Needs just only one pot for the entire cooking). In this time I should admit a fact that most of the traditional recipes in India or any country were cooked by using only one pot. The history of one pot cooking is a very interesting one.Nowadays , thanks to the line / batch manufacturing techniques, we get a wide range of vessels.

Let us relish the Medicinal value and goodness of this porridge.
*It is easy to digest and helps to get a 'good night' sleep.
*People recovering from fever and strong medications can have this porridge.
*People with dietary concern can replace rice with cracked wheat.
*Good diuretic, as cumin seeds helps this.
*Dietitians recommend this porridge without sugar for people with heart diseases ,as garlic has such a healing power.

Ingredients:
Rice - 3/4 cup (150 gms)
cumin seeds - 1 tsp
Fenugreek seeds(Methi) - 1/2 tsp
Garlic - 10 pods
water - 1 cup
Milk - 2 cups
sugar - 1/3 cup (optional)
salt - 1/4 tsp

Method:
Choose any rice like Basmathi / sona masoori/ Jeeraga samba.
In a dry mixie jar, coarsely grind rice with methi seeds.
Transfer the powdered rice to a vessel with lid.
Add salt and Cook them with water and milk .
Care should be taken while cooking , as rice may tend to form bubbles and spill.
After the rice gets cooked add cumin seeds, chopped garlic and sugar.
Then cook it in low heat for 5 minutes and turn off heat.
The consistency should be like a soup.
Milk porridge is ready.

Serving suggestions:

This can be Served as a mild & non stuffy dinner during festival times.
Serve hot in soup bowls with sesame / mint chutney.
One spoon of porridge and then goes a pinch of chutney..This is how I like it.
The quantity given above will be enough to serve 2 adults.

Black gram sweet ball. (Ulunthan kali)

The ulunthangali is a traditional food prepared in villages of Tamilnadu.
People make this ulunthankali as a healthy breakfast for girls who attains puberty. They mix this kali (sweet ball) with gingelly / sesame oil as garnishing layer. Moreover everyone can consume this for its high nutrition and fibre content.
This is considered to be a wholesome food and so it is served as breakfast. (But I prepare it for an early dinner too). Actually people use dry powdered blackgram and rice flour.
But I have tweaked it with germinated whole black gram (urid dhal) and substituted palm jaggery (not available here) with ordinary jaggery.
It is believed that palm jaggery can be safely used in small amounts even by diabetic people .



Ingredients:
whole Black gram - 1 cup
fenugreek / methi seeds - 1 tbsp
rice flour - 2 tbsp
jaggery - 1 cup
garlic pearls - 6
Gingelly oil - 2 tbsp

Method:

Wash and soak black gram and methi seeds together in water overnight (10 hours).
Grind the soaked black gram with methi seeds to a fine paste.
Heat 2 cups of water and jaggery.
(If you are lucky enough to get palm jaggery , then use that instead of jaggery).
Let it dissolve. Filter any dirt present.
Mix the jaggery solution with rice flour and ground black gram mixture.
Add chopped garlic. Then heat them in slow fire with constant stirring.
After the black gram gets cooked , the raw smell will disappear and the gali starts leaving the vessel like haalwa.
Then add gingelly oil and mix well.
Ulunthangali is ready.

Serving suggestions:

Garnish with Gingelly oil and Serve hot as breakfast.

A Carrot cake and some celebrations

Today Mr. Barack Obama has been elected as the 44th President of USA. So I am dedicating this posting for his Victory.
Coming back to our carrot cake,
As soon as we arrived here ,hubby and myself decided to taste all the cakes of USA :)
We started with this carrot cake and our journey towards this carrot cake aisle has now become a non stop one.
Then I gathered some courage and tried baking one carrot cake for our wedding day.
As a trial version I baked one carrot cake two days before and got succeeded .Immediately we shared with friends and finished it off :)
Then I became more confident and baked another one with icing also.
This is my trial piece in icing , so kindly bear with my icing :)
Usually in bakeries , they start the mixture from the All purpose flour. But I have simplified the original recipe by using a cake mix ( Bakers' choice brand - moist white cake mix).
Almost all carrot cakes are decorated with the image of a carrot . But I have tried making some orange color flowers.
Mostly American carrot cakes are decorated with cream cheese icing . But I used butter cream icing.
You can use ready made icing too.


Ingredients:
Any brand 'moist white' cake mix - 1/2 of 1 lb pack.
water - 1/2 cup (half of the amount said in the pack, as the carrot , pineapple will release some water)
Powdered cinnamon - 2 tsp
vegetable oil - 1/3 cup
egg - 1
cocoa powder - 1 tsp
orange peels - 2 tbsp
vanilla extract - 1 tsp
shredded carrots - 1 cup
Shredded coconuut - 1/2 cup
chopped walnuts - 1/2 cup
crushed pineapple in can (drained)- 1/2 of a 8 oz can.

For Butter cream icing:

Unsalted butter - 1/2 bar (5 tbsp)
confectionary sugar - 2 cups
milk - 1 tbsp
vanilla essence - 1 tsp
Food colors like orange , yellow and green

Method:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
Mix water, oil, eggs and vanilla using in a blender / mixie.
Add cake mix flour, cinnamon and run the mixer again to get a smooth batter.
Pour the batter to a broad bowl.
Add the carrots, coconut, walnuts and pineapple and mix well with a spoon.
Pour into a round pan. Bake at 350 degrees for about 35 - 40 minutes..
Allow to cool and turn it upside down.

Frosting:
Mix softened butter with confectionary sugar, milk and vanilla essence.
This can be of a thick conssistency like a murukku flour.
Keep 1/2 cup icing separate , to add color.
Spread the white icing uniformly all over the cake by using a knife or icing tool.
Mix colors to the remaining icing .
Then decorate the cake with color icing using the icing cone.
If you do not have an icing cone then fill the colors to small zip lock covers , cut a small opening at a corner and decorate the cake.
The ultimate carrot cake is ready!

Note: The above said quantity is enough to make one round cake of 2 inch height.
So , double the quantity to bake 2 rounds .
Adding 2 tbsp of chocolate cake mix will enhance the taste.
Adding orange juice instead of water will make the cake more flavorful.


Serving suggestions:

Refrigerate the cake and serve chill as dessert.
The quantity given above is enough to make one round cake and a heart shaped cup cake.

3 cups shredded carrots
1 cups cooking oil
2 cup sugars
2 cup all-purpose flour
1 tsp. baking powder
4 eggs
1 tsp baking soda
1 tsp cinnamon

Soft Chapathi and Green gram curry

Chapathi / roti is the staple food of North Indians .It is served as a main course meal with many healthy side dishes like dhal , kuruma etc.Making soft chapathi is really a great art. I envy those people who make chapthies that tear like a soft cotton. Because I was always bad at making chapathies .I tried adding curd, milk, bananas and even baking soda.But my chapathies were so stiff like pappads till I get the advice of Purva Desai of Purvas Daawat on the art of kneading the dough.It was much helpful.
In addition I googled and came out with a Gujarathis' technique on flattening the chapthi.They divide a chapathi dough into two pieces and roll one over another to get a layered texture.
Nowadays my chapthies are coming out as soft as a bread and I am sharing the secrets I got.

Ingredients:
wheat flour - 2 cups
salt - a pinch
olive oil- 3 tbsp
water - 3/4 cup (varies)

other Items needed
:
roti rolling pin,
a flat clean surface
a wet clean towel
thick dosa tawa (Always use a separate tawa for roti/ chapathi making.Otherwise you may not be getting dosa easily. ),
a spatula
A wide shallow vessel, .
a small piece of cloth rolled into a ball shape to press the chapathi.

Method:

Mix wheat flour with salt well.(buy the whole wheat flour in any Indian grocery store).
Add water little by little and knead a soft ball.
Beat it and knead for 2 minutes.
If you touch the dough , it should not stick to the fingers.This is the consistency.
Then coat the dough ball with little oil. Keep it inside the vessel. (Cover with cling wrap (or)
Take a clean towel, soak it in water and squeeze all the water.
Cover the top of the vessel with the wet towel ).
Keep the set up for 1 hour.
Then divide the dough in to equal portions of the size of a big lemon.
Take one ball, divide it into two portion.
Roll each one into smooth balls.
Keep some wheat flour in a wide bowl.
Dip the ball in flour and flatten it using the rolling pin to make thin circular chapathies.
Heat the tawa , and place the uncooked chapthi over it.
Sprinkle few drops of oil on chapati.
Flip it immediately and gently press once with the ball shaped cloth (or spatula) uniformly.
After 1 minute take out the chapathi and store it in closed vessel like a casserole / hot box.
The steam produced by the hot chapthies inside the vessel makes the chapathies more soft.
Serve hot with any curry / subzi.
Makes 10 chapathies.

Green Gram curry:


Ingredients:

Whole green gram - 1 cup
tomato - 1
red onion - 1/2
Garlic - 3 pearls
ginger - 1 inch
cilantro - a handful
mint leaf - a handful
chilli powder - 1 tsp
coriander powder -1 tsp
channa masala mix (or)
any Biryani masala - 1/2 tsp
Turmeric powder - a pinch
Fennel seeds - 1 tsp
salt - to taste
oil- 1 tbsp

Method:
soak the green gram in water overnight (or) 12 hours and let it germinate.
Cook the sprouted green gram in boiling water for 5 minutes.
Grind onion, ginger, garlic , cilantro and mint leaf together.
Heat oil in a kadai
Add fennel seeds and let it turn red.
Then goes the ground mixture.
Stir fry the mixture till the raw smell goes.
Add the chopped tomatoes and cook it.
Then add all the powders given along with cooked green gram and salt.
Cook it and mash a little to get a thick curry.
Green gram curry is ready.

Serving suggestions:
Garnish the curry with chopped raw onion and Serve it hot with soft chapathi/ roti.

Update (Dec 7, 2010):
 Recently I started adding luke warm water instead  of cold water  while kneading the dough.  By adding warm water, we can avoid adding oil to knead the dough. Make the dough as said above and it can be used to make chapathi immediately. Take a small ball out of the dough , dip it in dry wheat flour and start rolling out into thin circles. It will give very soft chapathis. 

 (The left over dough should be coated with a little oil and wrap with cling wrap / plastic cover and kept in fridge for further use.  we can make this dough in morning / night and keep refrigerated for next time use also).

Hash brown Burger and a cute award!

As a change one fine day we wished to have a different lunch and we sacrificed our staple food i.e., RICE.So I browsed quickly through my freezer and came out with this handy "hash brown potato patties ", which is the main ingredient to make this burger. Then I proceeded with this vegetarian Burger with an Indian touch. Packed this in aluminium foil as his lunch pack.

Here is the recipe for Hash brown Burger.

Ingredients:
Burger buns - 4
Hash brown poatao patties (frozen) - 2
green chilli - 1
Green bell pepper - 1/2
Red onion - 1 (medium size)
shredded cheese - 1 tbsp
besan flour - 1 tbsp
ginger garlic paste - 1 tsp
cilantro & mint leaf puree - 1 tsp
tomato-1
Tomato sauce - 3 tbsp
olive oil - 2 tsp

Method:
Heat a tawa , spread a pinch of butter/ oil and toast all the buns both sides. Keep aside.
Microwave the hash brown potato patties for 2 minutes and scramble them.
chop the onion , green chillies, tomato ,bell pepper and mix it with the scrambled potato.
Add ginger garlic paste,cheese, salt, cilantro - mint puree, Tomato sauce , besan flour and mix well.
Divide it into 4 eaual portions and make 4 balls.
Heat a tawa . Spread 1 tsp olive oil over the tawa.
Place one ball over the tawa and spread it to 1 inch thick patty.
Cook it both sides ,now your burger patties are ready.


Burger arrangement:

Place the one burger patty inside each toasted burger bun.
Mix some chopped green pepper, red onion with tomato sauce and introduce it as a layer between one side of patty and burger.
Decorate it with lettuce leaves.


Serving suggestions:
If you want to pack the burger for lunch then wrap it with silver foil after it gets cool (otherwise burger becomes soggy)and place inside container.
approximate calories in 2 such burgers = 450.
Serve hot with french fries , hot sauce and a chocolate drink. (yes, I am chocoholic).chocolate is made of cocoa .cocoa has a lot of antioxidants and helps us to get rid of depression , avoid premature aging of skin and to retain good health. So Guys lets all go chocoholic:)

Paruppu usili

Deepawali is around the corner and if you guys are looking for some special vegetarian dish , then you can try this paruppu usili.
This is a side dish prepared by Brahmins of TamilNadu , India.
If you start preparing this Paruppu usili, then you will definitely prepare this dish atleast once in a month. My hubby and myself love this dish very much with More-Kulambu , rice and Madras appalam.
Try this and tell me how it turned out.

Paruppu Usili.

Ingredients

string beans / cluster beans / ordinary green beans/Ivy gourd (kovakkai) - 250 gms (cut pieces - 2 cups).
Red gram / Thoor dhal - 1/2 cup
Bengal gram / channa dhal - 1/4 cup
Dry red chillies - 4
asafoetida powder / hing - 1/4 tsp
turmeric powder - 1/4 tsp
salt - 1 tsp
curry leaves - 1 sprig
oil - 1 tbsp
mustard seeds for tempering
shredded coconut - 1 tbsp
cumin seeds - 1/2 tsp
chopped onion - 1/2 cup
Salt to taste


Usili Idlies:

Soak the thoor dhal with channa dhal overnight or for 3 hours in warm water.
Grind this to a coarse paste with 2 broken dried red chillies, 1/4 tsp of asafoetida powder, pinch of turmeric powder, 1 tsp salt and a few curry leaves with little water.
Steam this paste in an idli-steamer or a regular steamer for 10-15 minutes until the lentil paste is cooked.(Like Idly..see image).
Remove the cooked dhal to a bowl once cooled and scramble them into small pieces. Keep aside.

Method:
Heat a pan with 1 tbsp oil, and put in the scrambled usili. Stir them around on medium flame till golden and slightly crispy. This will take around 5-7 minutes. Keep this aside.
In the same pan, take 1 tsp oil, crackle the mustard seeds, add the broken red chilli pieces with onion. Once they get fried , add the chopped kovakkai .Then add some water , put a lid and cook it .After the Ivy gourd becomes tender add salt to taste, stir around for 2 minutes.
Add the stir fried usili and stir together for 2 minutes until they have come together. check for salt.
Finally add shredded coconut and cumin seeds, Then put off stove.

serving suggestions:
Serve hot with More-Kulambu or Karakulambu and rice .

Note:
You can make double the amount of usili Idlies and store them in freezer for the next time .

Village style chicken curry


Hi friends , as the weather is getting cooler and cooler our taste buds will start craving for more spicy foods.Here is a spicy Tamilnadu style chicken to satisfy ourselves.
There is an interesting story too. Men in my native place have the habit of having 'oil bath' (apply gingelly oil on head and body, have a massage and take a herbal shampoo shower) on Saturdays . While they are taking bath the women will lit up their stoves and cook chicken curry to start a wonderful weekend.As of now there were no stores selling chicken, so they reared the hen and rooster in their backyard and used them to produce egg and meat. They cooked the chicken in many ways so that it gives complete nutrition for their family. In olden days people had a different life style and they were able to eat and relish ghee chickens. But now we live in an era of less human labor so I have tweaked the older version by adding some oil with ghee:)
Just try this for your weekend and tell me how it turned out.

village style Milagu kozhi varuval / Pepper chicken- (country style) / kiramathu milagu kozhi.
Ingredients:
whole chicken - 600 gms (take 1/2 of it vertically)
turmeric powder - 1 tsp

To marinate:
curd - 1/2 cup
salt - to taste
coriander powder - 1 tsp
chilli powder- 1 tsp
(if you want a mild red color in the curry , otherwise add 1 tsp pepper powder.)
turmeric powder - 1/4 tsp

To fry:

curry leaves - 2 brig
tomato - 1
shallot onion (sambar onion) - 10
cilantro - a handful
ghee - 3 tbsp
(But I added ...ghee- 1 tbsp + olive oil- 1 tbsp + gingelly oil - 1 tbsp)

To grind:
Pepper corn - 2 tsp
cumin seeds - 2 tsp
shallot onion - 5
ginger - 2 inch
garlic - 4 pods
coriander seeds- 2 tsp
cloves- 4
cardamom- 2
cinnamon - 1 inch

Method:
Wash the chicken with 1 tsp turmeric powder and water.Remove the skin (or keep the skin if you like a more native taste).cut the whole chicken in to big pieces.
Marinate it with turmeric, chilli powder (or) pepper powder, coriander powder, curd and salt.Keep it aside.
In little oil roast every thing given to grind together and grind them in to a fine paste.
You will definitely need a thick bottom vessel with lid to prepare this 'milagu kozhi varuval'.Then only we will get a more crispy fry with less oil.
Heat ghee / oil mixture in the thick bottom vessel.
Add fennel seeds and add chopped onion. saute the onion till it becomes golden brown.
Now add the ground masala and stir continously till oil gets separated.
Now add chopped tomato and minced cilantro and let them cook.
Add the marinated chicken pieces and saute well.
Add 2 cups of water and close the lid.
Cook it for 30 minutes with occasional stirring.
Cook the chicken till the oil separates out and the curry becomes thick and oil gets separated.
Add curry leaves and 1/2 tsp pepper powder and switch off stove.
Country style Tamilnadu 'Milagu kozhi varuval' (Tamilnadu style pepper chicken) is ready to serve.

serving suggestions:
serve 'country style chicken' with steamed rice and sambar.
Also suitable with roti / naan / chapathi.

Kerala Avial (II)

My friend Mrs.Priya Anand gave me the recipe to do this kerala Aviyal.
Before hand I was trying a different version .I used to add coconut milk and do some tempering at the end. Then , I learnt that Keralites do not temper their aviyal. So I tried it this way and it tastes awesome.

Ingredients:

White pumkin - 100 gms
Yellow pumkin - 100 gms
1-Raw banana (vazhakai)
1-Potato
1-Podalangai (snake gourd)
1-carrot
chenai - 100 gms (Indian yam)( I have not seen it at the grocery, frozen is available though- you can skip)
10 strings beans
1 drumstick
2 cups-yogurt (thick should not be watery)
1 cup-coconut
green chillies 6-8 (as per taste)
curry leaves (karugapalai)
coconut oil-2 tablespoon
turmeric
salt

Method:
Cut all the vegetable in one and a half inch long thin strips (like finger chips) Add pumpkin as per required quantity after putting all the other vegetables depending on how much you need. Boil the vegetables with turmeric and salt. When the vegetables are almost cooked drain out the excess water. Add the yogurt and let it come to a boil so that the yogurt is mixed well with the vegetables. Mix carefully as the vegetables may break. Grind the coconut and chillies to a fine paste. You can add the water from the boiled vegetables and grind to a thick paste. Do not add too much water. Add this paste bring it to a boil. Turn off the gas and add curry leave and coconut oil and mix well.

Serving suggestions:

Serve with rice , rasam and papadam.It can also be served with chapathi , naan , adai etc.

Sodhi



Sodhi is one of the unique and popular dishes in Tirunelveli.Sodhi is otherwise called Thengaipal kulambu / coconut milk stew. Sothi is a delicious gravy made of coconut milk and vegetables. This is served at marriage feasts, especially during the Maruveedu (return marriage) ceremony which takes place the day after a marriage.
Sodhi is a heavy dish so it is generally consumed as lunch only.
I used a thick coconut milk from can. But if you wish to extract the coconut milk then you may need 1/2 of a big coconut.Extract milk three times and keep the first thick milk separate and add it in the last step. Mix the 2 nd and 3 rd extracts and use it to cook the vegetables.
Stick to the recipe to get the perfect 'sodhi'.

Ingredients:
Coconut milk (canned) - 4 tbsp
Ginger grated - 2 inch.
Moong Dhal -1/2 cup
Garlic - 2 pods.
Lime/lemon juice - 1/2 (2 tbsp)
Carrots - 1 cut in long slices (50 gms)
Drum Stick - 1 (100 gms)
potato, - 1 cut in cubes (100 gms)
Onion - 1 cut in large cubes
Cabbage - 1/4 of a medium sized cabbaged cut in large pieces. (100 gms)

To grind:
Grated coconut - 1 tbsp
Cumin seeds - 1/4 tsp
Green chilies - 2-3 (depends on how spicy you want it)

Method:
Cook the moong dhal with garlic in water.
If it is 3/4 th cooked , add all the vegetables and cook it till the dhal becomes mushy.
Take the 2 tbsp of thick coconut milk from the can and dilute it in water to make one can and add it to the boiling vegetables.
(If you are extracting milk, then you may need 1/2 big coconut to do the entire dish.)
Grind the ingredients of the ground mixture.
When the vegetables are tender add the ground mixture and 1/2 can of coconut milk and let it cook for some time.
Now add the remaining thick coconut milk (2 tbsp).
Crush the ginger and extract juice .
Just before you switch off the stove add the ginger juice and cook for a minute and take it off the stove
When Sodhi cools down add salt and lemon juice and temper with mustard and curry leaves. (some people do not temper it).

Serving suggestions:
Makes nearly 700 ml 'sodhi'.Serves 4 people. Serve it over cooked rice.
It should be served more generously like buttermilk so that it runs out of rice.
Do not heat the sodhi as it will give a bitter taste. So try to serve it with piping hot rice. Ginger chutney, sembu (arbi root) fry are suitable side dishes.

Ginger chutney


Last saturday I prepared this Ginger chutney as side dish for 'sodhi' (a coconut milk stew) and rice.I will post the recipe for 'sodhi' soon.

Ingredients:
Ginger - 50 gms (peeled and cut ..a handful)
Tamarind - a small strawberry size
Coriander seeds - 1/2 tsp
Red chilly - 4
Grated Coconut - 2 tbsp
cooking oil - 2 tbsp
salt - 1/2 tsp (to taste)
jaggery - 1 tsp (crushed)

Method:
Heat 1 tsp of oil in a paan and saute the ginger till it turns brown
Fry the red chilly, Coriander seeds and coconut gratings separately
Grind the ginger along with the items that were fried separately , salt and jaggery.
Heat the remaining oil temper mustard seeds and add the mixture.
saute the mixture till it becomes thick.

Serving suggestions:

It is otherwise called Ginger pachadi / ginger thokku / ginger chutney. This is good for digestion. It can be served with sodhi with rice , chapathi , idly, dosa etc.

Aviyal (Mixed veggie curry).


This is a famous dish of kerala . I call this as Kerala aviyal because TamilNadu Aviyal is a bit different and we should add mango , tamarind and tomato instead of curd. Moreover kerala aviyal has more coconut masala than the Tamilnadu version. I will narrate the other pattern soon.
I used canned coconut milk. It was so thick , so i used just a tablespoon of it.
If you are extracting milk then use 3 tbsp of shredded coconut to get milk.


vegetables:

Unripe banana (choose Indian banana) - 1
Baby brinjal / small eggplant - 3
Drumstick - 1
Red onion - 1
carrot -1
green peas - 1/4 cup
potato / yam (senai kilangu in tamil) - 100 gms

(cut the drumstick into 1.5 inch pieces. Peel and cut banana , potato and carrot like 1.5 inch french fry pieces.Cut the brinjal into 1.5 inch long french fry pieces.chop the onion coarsely.
Banana , drumstick , red onion and brinjal are a must in an aviyal . You can add or substitute any vegetables like cluster beans, green beans, pumpkin , winter melon, etc.
Cauliflower , cabbage , broccoli , celery and beetroot do not go along with the recipe.)

Masala:
shredded coconut - 3 tbsp
green chilli - 4
cumin seeds- 1 tsp
(Grind all of the above coarsely).

Other ingredients:
Indian yogurt / curd - 1 cup
coconut milk (from can)- 1 tbsp
shredded coconut - 1 tbsp
coconut oil (or)any cooking oil - 1 tbsp
curry leaves - 1 brig
mustard seed - 1tsp
salt - to taste
water- 2 cups

Method:
Cut the vegetables as narrated .
Take a deep pan with lid. Add all the veggies with 2 cups of water.Add 1tbsp thick coconut milk. DO NOT add salt now. Cook all the veggies completely (but not too soft). Now add salt.
Add the masala and mix well.
After 5 minutes add the curd and check for salt.Now switch off the flame immediately after adding curd.
Heat a separate pan with oil and splutter the mustard seeds. Add the remaining shredded coconut, curry leaves and fry till it becomes golden in color.
Add this to the cooked veggies and serve hot .

Serving suggestions:
Makes 500 ml of aviyal (nearly 2.5 cups).
It can be served with sambar rice , rasam rice , roti , chapathi .
More suitable with Adai or Rasam on steamed rice.

Vegetable Kuruma.


This is a kind of vegetable kuruma prepared in Tirunelveli hotels and parotta stalls.
It has a unique flavor as the kuruma is made with a different masala and curd.It goes fine with parotta. It can be made in bulk for a week and stored in fridge for serving with chapathi at night.


Ingredients:

Cauliflower - 100 gms (1/4 flower)
Beans - 100 gms (25 number)
carrot - 1
potato - 2 (medium size)
tomato - 1
Red onion - 2 (medium size)
green chillies - 4
coriander leaves - a handful.
mint leaves - few
curry leaves - few
curd - 1/2 cup
besan flour - 2 tsp
shredded coconut - 2 tbsp
cumin seeds - 1/2 tsp
red chilli powder - 1 tbsp
turmeric powder - a pinch
curry masala powder / channa masala powder - 1 tsp
salt - to taste
olive oil - 1 tbsp
cardamom - 2
cloves - 2
Fennel seeds - 1/2 tsp
bay leaf - 1
ginger garlic paste - 1 tbsp

Method:
Grind ginger and garlic together.
Grind shredded coconut ,cardamom, cloves, cumin seeds and 1 onion together.
Grind again together  with curd, besan flour keep aside.
Cut cauliflower into big pieces.
peel and cut other vegetables in to big pieces.
Heat oil in a pan. fry some fennel seeds and bay leaf.
Add the chopped onion, green chillies ,curry leaves, cilantro and mint leaves. After the onion turns golden brown , add ginger garlic paste and saute well.
Now add all the vegetables, salt and mix well.
Add 2 cups of water, chilli powder, turmeric powder , curry masal powder and stir well.
close the lid and cook all the vegetables to tender.Add the coconut masala and let it boil it gives a nice flavor.
Boil for few more minutes in low flame , close and Switch off.
Serving suggestions:

serve hot with parathas or roti or naan .
Makes 4 cups of vegetable kuruma and serves 8 people.

Home made Syrup for digestion.

People in India consume some home made syrups for digestion problems.
They drink this syrup before bedtime once in a week.
This is one of the few kashayams (syrups) used in TamilNadu for getting gas relief.
This is the simplest among various syrups . Pregnant women should not drink this.

Ingredients:

Garlic - 7 pearls
Dry ginger powder - 1 tbsp
cumin seeds - 1 tsp
Black pepper - 1 tsp
coriander seeds - 2 tbsp
Asafoetida - 1 pinch
Jaggery - 100 gms
water - 3 cups (600 ml)

Method:

Except jaggery grind all the ingredients given above with little water.
Boil the given amount of water with jaggery and add the herbal paste made.
Stir occasionally and boil everything until the liquid gets reduced to 2 cups.
Now cool the syrup and strain the clear syrup out of it.
Drink it at night (one hour after dinner) to get rid of digestion problems.
serves 2 people.

Milagu saadam



Milagu saadam is the Tamil equivalent of Black pepper fried rice. (saadam means cooked rice and Milagu means Black pepper). Milagu saadam is a special dish usually prepared in the Lord Shiva Temple (Nellaiyappar kovil)of Tirunelveli , TN , India as Pooja offering . It is easy to make and tastes wonderful. Stick to the recipe and DO NOT USE ready made PEPPER POWDER to make this dish. USE WHOLE PEPPER ONLY. Because whole pepper has a wonderful aroma.
Usually people serve 'Paruppu podi saadam' in the beginning of a feast. Instead of it Milagu saadam can also be served before serving sambar rice in a vegetarian dinner. Milagu saadam is good for digestion.

Ingredients:

Rice (Jeeraga samba / kali Jeera rice) - 1 cup
Black pepper (whole) - 1 tbsp
cumin seeds - 1 tsp
mustard seeds - 1/2 tsp.
salt - 3/4 tsp
Olive oil - 1 tsp
Ghee - 1 tsp
cashew nut - 5
curry leaves - 2 sprig

Method:
Heat oil in pan . Fry mustard , cumin and pepper corn till the mustard seeds start to crackle.Put off fire and fry 1 brig of curry leaves in that heat.
Let them cool . Crush them in a small jar of the mixie /blender.
Add some salt (1/2 tsp ) to this powder.
Cook 1 cup rice with little salt (1/4 tsp) and 2 cups water.
Care should be taken so that the cooked rice is firm and all the grains remain separate.
Heat 1 tsp ghee in a pan. Roast the cashews in ghee . Switch off flame. Add 1 brig curry leaves to the same pan . Garnish the rice with this.
Mix the crushed pepper mixture with the rice thoroughly.
Do not break the rice while stirring.
Pepper fried rice is ready.

Serving suggestions:
Serve hot with 'vada kari' (a spicy stew prepared with fried lentil balls) or aviyal ( boiled mixed-veggie side dish) and appalam.

Red Capsicum Chutney






Ingredients

Red capsicum - (400 gms) deseeded and chopped
Dry red chillies - 4
garlic - 2 pearls
mustard seeds - 1 tsp
cumin - 1/4 tsp
curry leaves - 1 brig
olive oil - 1 tbsp
tamarind - cherry fruit size
salt to taste
Tomato - 1 (optional)

Method:

Heat olive oil in a pan and add mustard seeds. Once they splutter, add the cumin and fry a few seconds. Add a couple of curry leaves.
Add dry red chillies and fry for a few seconds.
Take them out.
In the same oil fry the chopped red capsicum . Add chopped tomato also , if you want more quantity.
Add the tamarind to it , sprinkle some water and close it with a lid.
Cook the capsicum till it becomes tender.
Once all fried ingredients are cool, grind with garlic and salt to taste .
No need to temper this chutney at the end.

Serving suggestions:

Serve with hot fluffy idly or chapathi or dosa.
It can be used as a sandwich spreading too.

Butter milk stew



'More' is the tamil word for Buttermilk .So 'More kulambu' means a stew prepared with Buttermilk.Originally people prepare this stew with churned buttermilk. But I make it with thick yogurt and it tastes great.This kulambu is a must if you prepare a traditional TamilNadu style lunch. More-kulambu should be served over steamed rice , after serving sambar and vathak kulambu. I will narrate the order of serving various curries in a typical Tamil Nadu style soon.

Ingredients:

Thick curd (Desi Yogurt) - 1 cup
Turmeric powder - 1/4 tsp

white pumpkin / winter melon - 200 gms
(Or) any vegetable like brinjaal , fried Okra - 200 gms
(or) masal vadai - 7

Ginger - 2 inch
green chilli - 2
Bengal gram / channa dhal - 1 tbsp
rice - 1 tbsp
salt - to taste
oil - 1 tsp
mustard - 1/2 tsp
Dry red chilli - 2
curry leaves - 1 brig
water - 2 cups

Method:

soak channa dhal and rice for 30 minutes.
Grind ginger , green chillies , rice and channa dhal to a fine paste and keep aside.
Heat 2 cups of water in a cooking pan and add the white pumpkin pieces .Add turmeric and salt to it.
Close the lid and cook the white pumpkin.After the white pumpkin gets cooked , add the masala paste and stir continuously till the raw smell disappears.SWITCH OFF THE STOVE.
Beat the curd and add it to the boiling veggies.
Heat oil in a pan.
Crackle some mustard seeds and add chopped dry red chillies with curry leaves.Add this tempering to the above.Garnish with chopped cilantro.
Yummy Buttermilk curry is ready.

Serving Suggestions:

Serves 4 people. Serve over steamed rice.
Potato fry is a good side dish for More Kulambu.

sesame chutney

Tamil translation for sesame chutney is 'Ellu thovaiyal' or 'Yellu thovayal'.
I use black sesame seeds to make this chutney.It should not be watery like coconut chutney.After grinding , you should be able to make a ball out of it. That is the perfect consistency.

Ingredients:
Sesame - 2 tbsp
shredded coconut - 1 tbsp
Dry Red chillies - 4
garlic - 1 pearl
cumin - 1/4 tsp
salt - 1/2 tsp
Tamarind - 1 inch
curry leaves - 1 brig
olive oil - 1 tsp

Method:

Dry roast the sesame seeds , till they start splutter. Take care not to char them.
Add 1 tsp olive oil in the pan and roast the dry red chillies.
Using a small jar in mixie / blender , grind all the items together after they become cool .
Add a little water only. You will get a lemon size ball of sesame chutney.

Serving suggestions:

It can be served as a side dish with any 'variety rice' like lemon rice , coconut rice or tamarind rice.
This chutney stays good for 2 days (without refrigerator) , if you roast all the given items and make chutney.

Lemon Rice

Ingredients:
Rice - 1 1/4 cup (200 g)
Lemon - 1 /2 small (3 tbsp fresh juice)
Mustard - 1 tsp
Bengal gram (channa dhal)- 2 tbsp
Dry red chilli - 2
turmeric powder - 1/4 tsp
curry leaves - 1 sprig
Sesame oil - 2 tbsp
salt - to taste

Method:

Rinse and cook the rice. Cook the rice in a grainy finish (not mushy). Let it cool a bit, by spreading it on a plate.
Heat oil in a pan . Add mustard and as soon as it starts crackle, add channa dal. Let the channa dal get mild red.
Add curry leaves and cut dry chillies.
Switch off stove.
In a  separate bowl, squeeze a lemon and discard seeds .
Add the juice to the fried items in the pan.
Add salt and turmeric powder.
Cool the rice a little and mix it with the items in the pan.
Lemon rice is ready.

Serving suggestions:

Serves 2 people as lunch or travel food.
Serve with Sesame chutney , coconut chutney or Black gram chutney.
This lemon rice will not get spoiled , if prepared without touching by hands or adding water at the end. It stays good for 2 days even outside the refrigerator.
Many people in India prefer to pack this for a road side trip or long train journey.
Best side dishes for lemon rice are potato fry or boiled egg stuffed with masala or masal vadai and also a piece of lemon pickle or a tbsp of thick coconut thogaiyal.

Vatral kulambu

Vathal kulambu, vaTral kulambu, vathakkulambu, vatha kuzhambu
Vathak kulambu or vatral kulambu is a spicy curry prepared in South India. Vatral means a some sun dried veggie or evaporated stew. In hotels they serve this curry over steamed rice , after the sambar rice. Though it is very common, only a few people do it in a graceful manner. From my childhood the chef inside me was searching for those wonderful people and luckily i found her in Missouri,USA.Yes , she is my friend Archana's mom 'Nalini aunty' and she taught me to do this vatral Kulambu.She is a great dietician and excellent home maker.I admire her a lot.I came across her vathak kulambu while we went to the lake of Ozark and I became addicted to it.She came to my house and taught me how to do this mouth watering vathak kulambu.I tried my best to present it in her way.She taught me with eggplant and drumstick.But here I am replacing the vegetables with Manathakkali vatral. Vathal/ vatral means a sundried vegetable.
The Botanical name of this berry is 'Solanum nigrum. Manathakkali is called 'Black NightShade' in English. In Hindi its called 'Makoy' or 'Manathakkali'. In Telugu its called 'Kamanchi Chettu'.

Ingredients

Manathakkali vatral - 2 tbsp
sesame oil- 2 tbsp
Tamarind - 1 small lemon size
chilli powder- 1 tsp
coriander powder- 2 tsp
sambar powder- 1 tsp
turmeric powder - a pinch
asafoetida- a pinch
cumin seeds - 1/2 tsp
mustard seeds - 1/2 tsp
fenugreek seed- 1/4 tsp
curry leaves - 1 brig
chopped Red onion or shallot - 3 tbsp.
Garlic - 5 pearls
salt - to taste
jaggery - 1 tsp

Method:

Extract juice from tamarind.
Heat oil in a pan , crackle mustard seeds and add cumin seeds , fenugreek / methi seeds, curry leaves and kulambu vathal .Take care not to char the items.
Immediately add asafoetida powder ,chopped red onion, curry leaves , garlic pearls and fry till the onion becomes golden brown.
Add chilli powder, coriander powder, turmeric powder , sambar powder and saute for 10 seconds.
Now introduce the tamarind extract and salt.
Let it boil and becomes a thick gravy.
Add a small piece of jaggery (10 gms) and switch off flame.

Serving suggestions:

Makes 250 ml of Vatha kulambu.
It can be served as a side dish for rice, chapathi and curd rice.
Goes fine with hot rice and pappad.
Manathakkali vathal is capable of curing ulcers.
So if used as a medicinal food , add freshly ground black pepper instead of chilli powder.
This can be preserved even outside refrigerator for 3 - 4 days(If oil is used liberally and handled with hygiene).
So this can be used for picnics and tour food packages.
This kulambu can be prepared and saved in fridge for a month.

Ribbon Pakoda

Basically I love home made snacks instead of buying them. Now it is rainy and cold outside. My Indian taste buds started craving for a spicy and crispy snack . The end result is Ribbon Pakoda or Oolai pakoda (in Tamil).
This is the first time i have ever prepared it and it became a wonderful snack for this weekend. I have given the original recipe here but I replaced butter by adding 2 tsp of ordinary cooking oil.
Try this recipe and tell me how it came out.



Ingredients:

Rice flour - 2 cups
Besan flour - 1 cup
asafoetida - 1 pinch
Red chilli powder - 2 tsp
salt - 2 tsp
oil - 500 ml
curry masala powder - 1/2 tsp
Butter - 1 tbsp

Method:
Mix salt with one cup water.
Add chilli powder, asafoetida, curry/ garam masal powder , rice flour and besan flour thoroughly.
Then add salt water little by little and make a dough like chapathi dough.
Now coat it with softened butter and mix well.
Heat a pan with oil.
Fit the ribbon pakoda maker in the "Murukku maker" and squeeze long strands of dough into hot oil.
After all the bubbles get settled, turn it using a spatula .Take out the golden brown ribbon / oolaai pakoda and drain oil using a tissue paper.
Generally it will not consume oil.

Serving suggestions:

Makes nearly 8 big rounds of ribbon pakoda.
Serve hot as evening snack along with tea / coffee.
After cooling they can be stored in air tight containers and will last for 2 weeks.(But will vanish soon as no one control themselves on seeing them ..ha .ha)

Murungakkai Puli kulambu



I think this is a kind of 'kara-kulambu' or spicy curry prepared in Tirunelveli, Tamilnadu, India.
I learnt this recipe from my mom .we had a very large drumstick tree in our backyard and my mom used to present cartloads of drumsticks to whoever asked her.Moreover she used to make delicious curries with the drumstick and its leaves.During those days we mock at our mom for making Murungakkai curry frequently.But after coming to USA, I realize the true value of those veggies on seeing their prices in Indian stores.

Ingredients:

Drumstick - 1
Small eggplant - 1
Tamarind extract - 2 tsp
shredded coconut - 1 tbsp
red onion - 1/2
cumin seeds - 1/2 tsp
mustard - 1/2 tsp
fenugreek seeds- 1/2 tsp
curry leaves - 1 brig
oil - 1 tbsp
asafoetida - 1 pinch
Red chilli powder - 1 tsp
coriander powder - 2 tsp
turmeric powder - 1 pinch
water - 2 cups
salt - 2 tsp

Method:

Cut drumstick into 2 inch pieces and slit each piece into two.
Cut the eggplant into small pieces.
Grind coconut, onion and cumin seeds with little water.
Heat oil in a pan.
Crackle mustard seeds , add fenugreek seeds , curry leaves and asafoetida.
Add the cut vegetables, tamarind paste , 2 cups water , chilli powder, coriander powder, turmeric powder, salt and close tightly with a lid.
After the vegetables are cooked add the coconut - onion paste and switch off after it starts boiling.

Serving suggestions:

Makes 500 ml of Puli kulambu.
It can be served for 5 people.
Serve hot with steamed rice and and any vegetable side dish or with egg omlete.

Onion - Tomato Chutney


The figure shows Adai served with onion-tomato chutney.

Ingredients:
Red / yellow onion - 1 medium size
Roma tomato -2
urid dhal (black gram) - 1 tbsp
Dried Red chilli - 4
tamarind - 2 inch

mustard seeds - 1 tsp
curry leaves - 1 brig
oil - 2 tsp
Salt - tsp

Method:

Heat 1 tsp oil in a pan.
Fry the urid dhal to red color.Keep aside.
In the same oil fry the red chillies and keep aside.
Add 1 tsp oil , fry the chopped onion to golden brown , keep aside.
In the remaining oil, crackle the mustard seeds and fry the curry leaves with chopped tomatoes.
cook the tomato with very little water. Switch of flame. Add the tamarind and mix everything. Let them cool.
Grind them in an Indian mixer or blender with 1 tsp salt.
Spicy , red oinion-Tomato chutney is ready.

Serving suggestions:

Serve as side dish with Idly , dosa or Adai.
Best side dish for adai.

Sesame Mothagam

After posting my recipe for mothagam (sweet rice mass) , I got an excellent recipe from my friend Mrs.Kalpana Murugesan. She is very good at cooking and hosting parties and I adore her recipes a lot.
Here is her yummy recipe.

Ingredients for pooranam (sweet filling):

jaggery- 1 cup
ground nut - 1/2 cup
sesame seeds- 1/2 cup
shredded coconut - 1/2 cup
Dahlia splits - 2 tbsp
cardamom- 4
raisins- 10
cashews-10

Ingredients for rice covering:
rice flour - 2 cups
Salt - a pinch
ghee/oil- 2 tbsp
Hot water - 1 cup

Pooranam preparation:

Dry roast the sesame seeds and ground nuts separately and coarsely crush them in a blender along with jaggery.
Now add the shredded coconut and crushed cardamom.
Fry the cashews and raisins in ghee and add it to the mixture.
Mix well and make lemon size balls out of it and keep aside.

Mothagam preparation:
Heat a frying pan and dry roast the rice flour until it looses all the moisture and becomes loose.
Add water,ghee/oil , salt to the flour and mix well to get a chapthi dough (bread / pizza dough).
Now take a small ball of rice dough, flatten it in your palm.
Put one sweet pooranam ball over the rice disc and start covering it inside the rice dough.
The rice coating should be thin.Make the shape of a coconut with kudumi.
Now arrange the mothagams/ kozhukattai on a idly baking tray and steam it like idly for 10 minutes.

Serving suggestions:
Serve hot / cold as dessert or snack.

Soft dosai


This is a softer version of dosa with very little oil.The other version is a crispy dosa called murugal dosa or paper roast dosa. Normally all the families in South India prefer to make this dosa for breakfast and dinner.This dosa can be prepared some time before we occupy the dinning table and stored in hot boxes. In Madras many restaurants call this dosa as kal dosai or set dosai and serve them as a pair along with "ketti chutney" (thick coconut chutney).
Ingredients:
Idly rice - 3 cups black gram dhal - 1 cup fenugreek seeds - 1 tbsp salt - 3 1/2 tsp (1 tsp for a cup of rice and 1/2 tsp for a cup of black gram) baking soda - 1/2 tsp (optional if you want a very soft dosai) Sesame oil - 50 ml (This measurement is for those who use Indian Mixer . If you use an Indian grinder take 3 1/2 cup Idly rice and 1 cup urad dhal, 1 tbsp fenugreek / methi seeds)
Batter preparation:
Soak rice separately for 5 hours. Dhal and fenugreek seeds need to be soaked together for about 3 hours. After that grind dhal till it becomes smooth. Add ice cold water while grinding to get soft idly. Rice should be ground separately.Do not add lot of water. The batter should be thick like softened butter. Add salt and the mix dhal with the rice mixture . Store this in a large vessel so that there is enough space for batter to rise. Grinding and storing of batter should be done the previous day, preferably in the night so that the batter would be ready the next day. The batter should be allowed to ferment for about 15 – 18 hours. I usually keep it inside the oven to get warmth.The next day, mix the batter well and it can be used to make idly or dosa. Generally people prepare Idly with the first day batter and the remaining batter can be used to make dosa. Moreover dosa comes out very well if the batter is more fermented. we can add a dash of yeast to the freshly ground batter to enhance fermentation of the batter.The remaining batter can be preserved in tight containers in refrigerator.
Dosa preparation

Heat a dosa tawa (non stick or iron).Drizzle 2 drops of sesame oil over the pan.
Using a clean cloth or wooden spatula rub the oil uniformly over the tawa.
Add baking soda and mix the batter well.Take a ladle (A ladle is a type of spoon used to serve soup or other liquids) of batter and pour it gently over the tawa and do not spread it or press it.Reduce the flame to medium heat.
After a minute turn over the dosa. After 30 seconds take out the dosa .
Again increase the flame, apply oil and repeat the above process to make a set of dosas.

Flip and cook both sides of dosa, don't press it. Let it be soft and spongy.

Serve hot with Coconut chutney , sambar or any spicy kuruma.I have shown tomato kuruma along with set dosai.

Chettinad chicken curry



This is a kind of chicken fry with some thick gravy .It has an unbeatable flavour and taste.
The chettinadu chicken varies from other kind of chicken curries by its spicy taste and some of the masalas used fo grinding.
Here is the perfect chettinadu chicken.

Ingredients:


chicken - 2 lb(a whole chicken cut into big pieces)

To chop
Small onions - 20 (100 gm)
Tomato -2
green chilli - 4 split lengthwise
coriander leaves- 1 handful
curry leaf - 2 sprig
curd - 1/2 cup

To grind # 1
ginger - 2 inch
garlic- 1 full

To grind # 2
Poppy seeds- 1 tbsp
coriander seeds - 3 tbsp
Red chilli - 3
Black pepper - 2 tbsp
cumin seeds- 1 tbsp
fennel seeds- 1 tbsp
cinnamon - 1 inch
cardamom -5
cloves -4
grated coconut - 2 tbsp

To temper:
Fennel seeds / sombu - 1 tbsp
star aniseed - 1
cinnamon- 1 inch
curry leaves - 3 sprig
sesame oil - 1/2 cup

Powders required:
Turmeric powder - 1 tsp
Red Chilli powder- 2 tbsp


salt - 3 tsp (to taste)

To Garnish:
Whole lemon - 1 (sliced to decorate)


Method:

Remove the skin and Wash the chicken in running water and cut it in to big pieces.
Wash again with 1 tsp turmeric powder.
Drain water.
Add turmeric powder, red chilli powder, lemon juice, coriander powder, salt , curd and marignate for 1 hour in room temperature or overnight inside fridge.

grind the ginger garlic paste and keep aside.

Chop the items given.


In a deep pan, heat the oil and add the items given for temper.
When they stop spluttering, add the sliced onions and fry till they are light brown.
Add the ginger garlic paste and fry for another 2-3 minutes.
Now add the tomatoes, green chillies, mint leaves and cilantro. stir well to mix all the ingredients. Cook till oil separates.

If needed add some more sesame oil or ghee.

Add the chicken, cover and cook in very low flame for 5 minutes.

Dry roast (To grind # 2)the poppy, coriander, cumin and fennel seeds, cinnamon, cardamom, cloves and coconut for 3-4 minutes. Remove from flame and allow to cool. Grind the mixture into a coarse paste.

Add it to chicken and cook till it is tender.

Garnish with minced coriander leaves and serve along with sliced lemon.

Serving suggestions:

This can be comfortably served for 8 people.
Time taken: 30 minutes for preparation and 1 hour for cooking.
Can be served with white bread,chapathi, naan, patotta, Biryani, coconut milk rice.

Chicken Gravy


You will need the following to prepare this chicken gravy:

Chicken (with bone) - 1/2 kg (1 lb)
salt - to taste / 2 tsp
water - 2 cups
oil - 2 tbsp
Fennel seed (sombu) - 1 tsp

To chop separately:

Red onion - 2
Roma tomato / vine tomato - 100 gms
curry leaves - 1 brig
cilantro - 1 handful
mint leaves - 1 handful

Masala 1:
shredded coconut - 2 tbsp
Shallot onion - 5
Cumin seeds - 1 tsp

Masala 2:

Ginger - 2 inch
garlic - 4 pearls

curry masala powder:

Fennel seeds - 1 tsp
cardamom - 2
cloves - 2
cinnamon - 1 inch
Black pepper - 1 tsp



Powders :

Red chilli powder - 1 tbsp
coriander powder - 2 tbsp
Turmeric powder - 1/4 tsp

Method:
Wash and clean the chicken pieces in running water.Apply some turmeric powder and keep aside.Dry grind the items given in curry masala powder.
Grind shredded coconut , cumin seeds, onion and keep aside.
Grind ginger garlic paste and keep aside.
Heat 2 tbsp of cooking oil in a deep pan and add 1 tsp fennel seeds (sombu).
After it turns red , add the chopped onion and fry till it becomes golden brown.
(If you are using yellow onion , then fry till it becomes tender ,as it can never get a good color.)
Add the ginger garlic paste and stir it well for 30 seconds.
Then add the chopped tomato, green chilli, cilantro , mint leaves, curry leaves and cook till they becomes mushy.
Now introduce the chicken pieces and stir it for 2 minutes along with the powders and dry masala.
Add some salt and a cup of water and close the lid for 5 minutes.
Then cook the chicken till it becomes tender (simply in a tightly closed vessel).
After it gets cooked , add the coconut masala and cook till the raw smell changes.
Check for salt and the tenderness of chicken and put off fire.
The gravy should not be too thick or too liquid .

Serving suggestions:

Serve hot as side dish with Naan , paratha ,chapathi ,steamed rice or white bread.
Serves 6 people.

French toast

Whenever i feel a bit lazy to prepare my hubby's lunch pack, i prefer doing this toast for him.Even today i remember my school days ,when my mom used to pack this delicious toast for my lunch.We call it as vanishing French toast because the toast will attract every one around you and you may end up with an empty box as soon as you open it.  
Ingredients:
Bread - 8 slices
Milk- 1 cup egg - 1
sugar- 3 tbsp
butter - 1 tbsp  
Method: Beat together egg, milk and sugar to a batter. Heat a pan or dosa tawa and spread a little butter. Dip a slice of bread in the egg+milk mixture. Don't soak the bread more than a second.(otherwise the toast becomes soggy) Fry till golden brown on both sides. Sprinkle some maple sauce and serve hot as breakfast. It can be packed as lunch too.
Approx. calories: (3 slices)
White bread 3 = 70 x 3 = 210
Sugar 3 tsp = 15 x 3 = 45 zero calorie sweetener - 1 pack = 0
egg (brown medium size) 1 = 70
butter 1/2 tsp = 18 (1 tbsp = 3 tsp = 100)
oil 1/2 tsp = 20 (1 tbsp = 120)
2 % milk 50 ml = 37 (1 ml = 0.729)  
TOTAL = 400 cal

Ennai Kathirikkai kulambu (fried eggplant curry)

This kulambu is my mom's favorite dish.


Ingredients:
Small brinjal- 6
Tamarind- 1 gooseberry size
onion (chopped)- 1 cup
chilli powder - 1tsp
coriander powder - 2 tsp
turmeric powder - 1/8 tsp
cumin seeds - 1 tsp
shredded coconut - 2 tbsp
feugreek (methi seed)-1 tsp
mustard seeds- 1tsp
curry leaves - 1 brig
sesame oil - 1 tbsp
sambar powder - 1 tbsp

Brinjal fry:
Remove the stem and bracts of brinjal.Wash it thoroughly in running water.
slit half way the brinjals from the stem portion.Do four cuts like this.
Mix 1 tsp chilli powder, 1 tsp coriander powder and 1 tsp salt with little water.
stuff the brinjals with this curry paste.
Fry them in 4 tbsp sesame oil, till the skin of brinjal turns a bit brown color.
Keep the fried brinjals aside.

curry preparation:

Extract the juice from tamarind.
Add the chilli powder, coriander powder, salt and turmeric powder to the tamarind extract.
use the same oil in the frying pan.Add mustard seeds and fenugreek seeds.
After the mustard gets cracked add curry leaves and half of the chopped onion.
saute them till the onion turns golden brown.
Then add the tamarind extract mixture.
Let it boil for 10 minutes.
Grind the coconut , cumin seeds and remaining onion into a fine paste.
Put this paste into the boiling tamarind extract.
After the raw smell of coconut-onion mixture is gone, add the fried brinjals.
Check for salt and put off fire immediately after the curry starts boiling.

Serving suggestions:

Serves for 4 to 5 people.
Serve hot with rice after dhal rice and before Rasam rice.

Lemon Rasam



Ingredients:
Lemon - 1
water- 4 cups
salt- 1 tsp
turmeric powder - a pinch
asafoetida- 1 pinch
Black pepper- 1 tsp
cumin seed- 1 tsp
garlic - 4 pearls
coriander seeds- 1 tsp
oil- 1/2 tsp
mustard seeds- 1/4 tsp
methi seeds- 1/4 tsp
curry leaves- 1 brig
cilantro- a handful
red chilli- 2


Method:

First dry roast the pepper,cumin seeds, coriander seeds till we get a nice aroma.
Then grind them with garlic to a coarse mixture.
Extract juice from lemon .Add salt and water and keep aside.
Heat oil in a kadai.Crackle the mustard seeds and add fenugreek seeds.
Then goes the red chillies and curry leaves.
Immdiately add the pepper garlic mixture and saute a little.
Sprinkle some asafoetida and turmeric powder.
Then add the finely chopped tomatoes and saute them till the tomatoes are half cooked.
Now switch off the stove and add the lemon juice.
Do not heat the rasam after adding lemon juice, because heating gives a bitter taste to rasam.

Picnic Tomato chutney:


To grind:
Tomato - 1 lb
red chilli powder - 1 tbsp
tamarind - 1 small gooseberry size
dry ginger powder - 1/2 tsp
turmeric - 1 pinch
asafoetida - 1 pinch
salt - 1 tsp
coriander powder - 1 tbsp

To Temper:
Garlic - 10 pearls
mustard seed - 1/2 tsp
fenugreek - 1/4 tsp
asafoetida - 1 pinch
curry leaves- 2 brigs
Red chilli(small bulky-Andhra chilli)- 3
sesame oil / cooking oil - 3 tbsp

Method:

Grind all the given items and make puree.
Heat oil in a deep frying pan.
Crackle the mustard , add fenugreek, asafoetida, red chillies.
Then goes the garlic and curry leaves.
After sauting the garlic for a while , carefully add the tomato puree.
Reduce flame after 5 minutes and let the puree becomes a thick gravy in low fire.
Put off flame after oil oozes out of the chutney.
cool it and store in refrigerator for a month.

Serving suggestions:
Great combo for chapathi, dosa, curd rice, dhal rice, Idly, Adai .
It can be made for a picnic lunch pack and lasts for atleast 3 days without cooler.
