Broccoli Poriyal


This is an  ' Indian version of broccoli stir fry'. I love this vegetable very much and we buy this always. I buy this broccoli as crowns (whole). But we can buy them chopped and frozen packs too. So I cook many recipes using broccoli.

In America, I have seen many people enjoying this as raw along with a dip. That's a nice choice too. But I cook it tender crisp to reduce the bloating effect of broccoli. This is one of the healthiest vegetables in the world. The athletes call this as smart carb. It reduces cholesterol, supports vision, liver, muscles and it is totally an amazing veggie. 


Ingredients:
Broccoli (chopped) - 1 lb (1/2 kg)
Red onion - 2 (small)
Sesame oil - 2 tbsp
Mustard seed - 1 tsp
Urid dal - 1/2 tsp
Curry leaf - few
Salt - 1 tsp
Turmeric powder - 1/2 tsp
Red chilly powder - 1/2 tsp
Water - 1/4 cup
Shredded coconut - 2 tbsp
Cumin - 1/2 tsp

Method:
Rinse and clean the broccoli.
Chop it into medium size pieces.

Heat oil in a wok. Add mustard, as it starts popping add Urid dal.
Immediately urid starts getting red, then add  the chopped onion, curry leaf and fry till the onion turns golden brown.

Then put the chopped broccoli and fry for a minute.
Add salt, Turmeric, Red chilly powder, and mix well.
Add 1/4 cup water and cook covered till the vegetable is cooked (3 mins) and water would be absorbed / evaporated by that time (medium heat).

Take off lid and saute till all the moisture is gone.
Add shredded coconut, cumin and mix well.
Switch off.

Broccoli poriyal is ready!

Serving suggestions:
Serve as side dish with sambar rice or roti or any rice.

Broccoli egg stirfry

Adding egg to any stir fry (poriyal) like beans, okra is common among Chennai people. I make such kind of egg stirfries for lunch pack. But I had never tried adding egg to broccoli until a friend suggested me. So if you are looking for innovative ways to cook broccoli, then here is one from my kitchen !

Ingredients:
Broccoli - 2 cups (coarsely chopped)
egg - 2
salt - to taste.
To Temper: 
onion - 1/2 cup (chopped)
green chilli - 3
curry leaf - few
mustard - 1/2 tsp
cumin - 1/2 tsp
urid dal - 1/2 tsp
coconut oil / olive oil - 2 tsp

Method: 
Chop the broccoli into small florets.
Cut the onion, green chilli finely.
Heat oil in a wok.
Add mustard, urid dal , cumin and let the mustard crack.
Then add the chopped onion, curry leaf and saute till it gets tender.
Then add the chopped chillies, broccoli. Saute well.
Sprinkle a handful of water and cook covered.
Then add required salt.
It will get cooked in almost 6-8 minutes in medium heat.
Now move the stir fry to one side of the wok.
Break open two eggs and stir gradually with the broccoli pieces.
As soon as egg coats the hot stir fry, it would get cooked.
Switch off.
Broccoli egg stir fry is ready!

Serving suggestion: 
Serve as side dish with rice or chapati.
Can also be served as breakfast instead of regular scrambled egg.
Instead of whole egg, we can use egg whites too.

Broccoli poriyal

Hope you all had a great 'Mother's day'. Mine was wonderful. we celebrated the Mother's day in the Church and crowned the Mother Mary's statue in our home by a home made flower wreath. The Father's message was very encouraging. He asked all the people to stand to get Mother's day blessings, as he wanted to bless each and every one for the motherly feelings at heart. Even the men were also honored, as they also play the role of a mommy sometimes:) Hubby presented me a beautiful pair of rose bud earrings and a brooch made of coral. That was my long cherished wish and somehow he presented me the same thing without knowing. That's romantic. Isn't it friends!

For today's post here is 'An Indianised version of broccoli stir fry'.

Whenever I see a vegetable, I always look for a way to add my native touch to it. Even the broccoli couldn't escape my tawa:) So here is a simple poriyal with the nutritious broccoli.



Ingredients:
Broccoli (chopped) - 2 cup
red onion - 1 (small)
any oil - 1 tbsp
fennel seed - 1 tsp
cilantro, curry leaf, mint leaf - few
red chilly powder - 1/2 tsp
garam masala powder - 1/2 tsp
Turmeric powder - 1/8 tsp
salt - to taste

Method:
Wash and clean the broccoli.
Chop it into medium size pieces.

Heat oil in a wok. Add fennel seeds and let them get red.
Then add the chopped onion, the leaves mentioned above and fry till the onion turns golden brown.

Then put the chopped broccoli and fry for a minute.
Add salt, red chilly powder, turmeric powder , garam masal powder, a handful of water and cook covered till the vegetable is cooked.

Take off lid and saute till all the moisture is gone.

Broccoli fry is ready!

Serving suggestions:
Serve as side dish with sambar rice or roti or any rice.
