Carrot usili

Finding more and more ways to cook carrot is one of my interests, as we get good quality carrot in all seasons at a very cheaper price here. But including it in our meals needs creativity:) Sometimes I make juice or desserts like carrot halwa or cake. Spicy foods like kuruma, stir fries, fried rice, salad, vegetable briyani , raitha, uthappam dosai, paniyaram can also be done. So whenever I go for a grocery shopping I buy a pack of carrots always. Instead of regular baby-carrots, occasionally I sliver these regular carrots for hubby's snack box too:)
Here is one traditional dal based Indian dish, Usili with carrot. Usili is one of the brilliant Indian recipes to make us get protein rich dals easily. I make usili often with many vegetables, as it is our favorite. Hope you all like this carrot usili too !

Ingredients:
Carrot - 3
sesame oil - 1 tbsp
mustard - 1 tsp
green chilly - 1
curry leaf - 1 sprig
shredded coconut - 1 tbsp

To grind:
Thoor dhal (red gram) - 1/2 cup
dry red chilly - 2
cumin - 1 tsp
sea salt - 1 tsp
turmeric powder - 1/2 tsp
hing - 1/8 tsp

Method:
Soak dal for 1 hour and grind in a mixie without water along with the other items to a fine paste.
Scoop the dal into idly plates and steam cook for 10 minutes.
Let it get cool completely.
Put it in the mixie again and pulse gently for a few times, so that the cooked dal looks loose.
(We can mash by hands too, but this mixie method will give good looking usili).
In the mean time wash and peel the carrot. cut them into small cubes.
Heat oil in a wok and let mustard splutter.
Then add the curry leaves, split green chilly, chopped carrot and stir fry it.
Cook covered along with very little salt for 5 minutes.
Then add the prepared dal mixture and stir fry it in high flame for few minutes.
Add shredded coconut and switch off.
Carrot usili is ready!

Serving suggestions:
Serve with kara kulambu + rice or rasam + rice.

Broccoli usili (dal fry)

Usili is a side dish made with dal, which can be compared to a dry form of dal fry.  It is one of the traditional foods that can be seen in many households of Tamilnadu. Any fibrous vegetable like carrot, beans, cabbage can be turned into usili. It is a great recipe to enrich the simple vegetables with proteins.
Many years ago when I first saw this broccoli in a supermarket in Missouri, I thought it as a green cauliflower:)  and cooked it just like that. But then only I found the smell and taste more dominant and it is certainly a different veggie, which is in need of more care:) Then I would add it in stir fries, pastas or soups only. Then tried making usili with that and it tasted very yummy. In this recipe I have added carrot also, but tastes good alone also.

Broccoli usili

Ingredients:
Broccoli - 1 lb
carrot - 1 (optional)
oil - 1 tbsp
mustard - 1 tsp
curry leaf - 1 sprig

sea salt - 1 tsp
turmeric powder - 1/2 tsp
hing - 1/8 tsp

Then add the prepared dal mixture and stir fry it in high flame for few minutes.
Switch off.
Broccoli usili is ready!

Serving suggestions:
Serve with kara kulambu + rice or rasam + rice.
Tastes good with chapati also.

Paruppu usili

Deepawali is around the corner and if you guys are looking for some special vegetarian dish , then you can try this paruppu usili.
This is a side dish prepared by Brahmins of TamilNadu , India.
If you start preparing this Paruppu usili, then you will definitely prepare this dish atleast once in a month. My hubby and myself love this dish very much with More-Kulambu , rice and Madras appalam.

Paruppu Usili.

Ingredients

string beans / cluster beans / ordinary green beans/Ivy gourd (kovakkai) - 250 gms (cut pieces - 2 cups).
Red gram / Thoor dhal - 1/2 cup
Bengal gram / channa dhal - 1/4 cup
Dry red chillies - 4
asafoetida powder / hing - 1/4 tsp
turmeric powder - 1/4 tsp
salt - 1 tsp
curry leaves - 1 sprig
oil - 1 tbsp
mustard seeds for tempering
shredded coconut - 1 tbsp
cumin seeds - 1/2 tsp
chopped onion - 1/2 cup
Salt to taste


Usili Idlies:

Soak the thoor dhal with channa dhal overnight or for 3 hours in warm water.
Grind this to a coarse paste with 2 broken dried red chillies, 1/4 tsp of asafoetida powder, pinch of turmeric powder, 1 tsp salt and a few curry leaves with little water.
Steam this paste in an idli-steamer or a regular steamer for 10-15 minutes until the lentil paste is cooked.(Like Idly..see image).
Remove the cooked dhal to a bowl once cooled and scramble them into small pieces. Keep aside.

Method:
Heat a pan with 1 tbsp oil, and put in the scrambled usili. Stir them around on medium flame till golden and slightly crispy. This will take around 5-7 minutes. Keep this aside.
In the same pan, take 1 tsp oil, crackle the mustard seeds, add the broken red chilli pieces with onion. Once they get fried , add the chopped kovakkai .Then add some water , put a lid and cook it .After the Ivy gourd becomes tender add salt to taste, stir around for 2 minutes.
Add the stir fried usili and stir together for 2 minutes until they have come together. check for salt.
Finally add shredded coconut and cumin seeds, Then put off stove.

serving suggestions:
Serve hot with More-Kulambu or Karakulambu and rice .

Note:
You can make double the amount of usili Idlies and store them in freezer for the next time .
